面对美食，大家都养成了「相机先吃」的习惯，甚至“忘记拍照不就等于白吃了”。很多人可能以为要拍出令人眼睛一亮的照片，非得需要专业的单反相机不可，其实我们利用每个人的手机就可以拍出超美的照片。

但明明用的都是手机，为什么拍出来的成品会天差地别？有些人把食物拍得昏暗杂乱引不起食欲，有些人却可以拍出令人好生羡慕的 “Food Porn”（目前最流行的美食照片形容词，意指令人垂涎欲滴的食物照片好像在色诱你一般）。

其实要拍出令人羡慕的照片一点都不难，只要掌握以下的几步，你也可以拍出漂亮的照片！

一、自然光是王道！闪光灯OUT！

充足的自然光可以让照片看起来明亮自然又温暖，更能呈现食物最原始的色彩。是拍出好照片的最佳利器。如果可以移动你的食物位置，例如是想记录你自己的手做的甜点，绝对不要在灯光昏暗的厨房里照，尽量移到光线明亮的窗户旁边，甚至是户外也可以。家里若有黄灯，拍摄时也建议关掉，尽量以白光、自然光为主。

如果是白天时间去餐厅用餐，很多专业的美食部落客也会特别指定窗边的位置，利用自然的采光拍出比较好的照片。 闪光灯或任何人工光源很容易制造出不必要的阴影，而且只要有足够的自然光，根本不需要任何专业相机，手机也能拍出色泽饱满又清晰的照片。

虽然自然光是拍到好照片的关键之一，但它也不是万能的。我们还是要注意光线的方向。如果光线是直接对着食物照射，那么画面会太过明亮，而旁边有可能会过于黑，而且层次感会减弱，所以不妨把食物移一下位置，尝试一下其他光线的方向出来的效果，像是逆光或者是侧光，这两种所打造出光也能营造出不同的效果。上边这张照片就是利用侧光时水杯的倒影与桌上的食物交错，让家常的食物在光影的陪衬下变得有趣许多！

如果室内光线比较不够充足，可以把手机光圈调大(操作方式在接下来的重点有图示）或是利用免费修图软件后期，但是就是别用闪光灯，别用闪光灯，别用闪光灯！（很重要所以说三次！）除非你喜欢惨白的效果…. 在室内就算灯光不够，在没有用闪光灯的情况下，只要将亮度提高，照片也可以有明亮跟自然的效果。最后一点，如果家里是用黄灯的话，建议拍照的时候把灯关掉，这样白平衡才会比较接近原色。

二、食物是照片的主角

焦点要对在主角上。如果你的主角是面包，那就要确定焦点是对在面包上，这样照片才会清楚。如果光线不平均或是不够，也可以把主食放在光线充足的位置，因为我们的视线会第一个注意到整张照片较亮的部分这样也可以增加立体感跟层次哦～ 或者是将主角摆在在前方亮处，而当焦点是对在前面，其他在后方的背景、道具就会显得有点模糊，那么会让画面更有立体感。

怎么知道主角是否对焦？以iPhone为例，在照相模式，手指轻触荧幕就会有小框框的出现。而框框在的位子就是焦点的所在，所以只要点你想要对焦的地方，就可以。如果希望在焦点的地方调整亮度，可以按住图中太阳的图案上下移动调整对焦范围内的亮度，如右图的面条上的框框。

三、食器和摆盘，道具也很重要

有质感的食器会让人增加食欲，在照片里也一样。虽然说食器是配角，可是主角也要有好的绿叶来衬托出它的美，不是吗？

由于食物是主角，所以餐具越简单越好（花花绿绿的盘子单看很可爱，可是会抢了主角，食物，的风头）。一开始，百搭的全白或全黑的基础款盘子是最安全的选择。另外，任何道具像是酱料、餐具、书本、杯子、或人，都可以帮忙衬托出餐桌上整体不同的意境。

像是早餐的食物，我常会拿计算机、咖啡杯当成道具的一部份，跟大家一边看浏览网络新闻一边吃早餐的生活习惯做连结。在餐厅用餐拍照时，餐厅的花瓶、MENU、刀叉，甚至是跟我用餐的朋友可能都会是成为食物的配件，利用不同的元素堆栈出整体的情境。道具也可以帮忙呈现第二点中提到的「层次」，例如可以把主食放在前方一点，而杯子、餐具或书本可以放在主食的后方一点，创造出至少两个层次。

四、找出最「对」的角度

食物不可能360度都是完美的，所以找到对的角度很重要！在拍照前，可以先全方面的观察一下盘（碗）里的食物，并找出你觉得最能完整呈现这道菜的重点。一般来说，选择食物馅料最丰富的、颜色最好看的、或是最有层次感的一面，能自动把你的食物照变的更好吃。可以将馅料最丰富或层次最鲜明的那面转向相机，或者是在摆盘的时候就可以考虑到颜色的穿插。例如，将豆芽菜放在虾跟豆皮之间，不然虾子跟豆皮沾满了咖喱酱料，都是咖啡色，这样可以让每样食材更加鲜明。

按下快门很简单，可是要拍出赏心悦目的照片也是有很多小细节要注意。如果能掌握以上的要素，好好掌握光线，让画面干净 (less is more, right?)，照片就会很有质感。

以手机做食物摄影的四大基本要素，自然光、主角、食器和摆盘跟角度。最重要的主角：食物掌握好了，可是也要有称职的绿叶来衬托出主角的美。虽然说是配角，可是它们却是在整体图片中占最大面积的：背景跟角度。

背景

大部份的人在拍照时往往相机拿起就直接拍了，而不会去顾虑到桌上是否凌乱不堪或是颜色很杂。其实一开始，背景越简单越好，例如白色与黑色。这就跟上次提到的盘子的道理一样，越简单、越干净、越能彰显食物本身的色彩。背景简单二分法为浅色和深色，该怎么选择是要用白色或黑色呢？

白色背景 / 浅色背景

白色能给人有种明亮、清爽跟有朝气的信息，而黑色会比较有个性，可是在食物的选择上可能就要注意。白色是个百搭的颜色。基本上，只要不是整个食物本身都是白色（或接近白色），都可以用白色作为背景。它很容易跟食物的颜色产生强烈的对比，可是如果只是一碗白米饭，它就很容易跟背景融为一体。

如果白色是百搭，哪时候可以用黑色呢？

黑色背景 / 深色背景

黑色背景大多数会给人一种moody（忧郁感）的感觉。可是有时候更能跟食物的颜色形成更强烈的对比，例如浅绿色的蔬菜 (eg. 萝美生菜、小黄瓜)、红色蔬果 (eg. 小萝卜 (radish)、石榴、小西红柿)或黄色蔬果 (eg. 芒果、黄椒)。可是像容易变黑的食物，如茄子、肉燥、巧克力等，在使用上就要小心，因为很容易糊在一起。在食器的选择上限制可能也就比较多。

像上面的图片，虽然说布朗尼是深色的食物，可是在大理石的桌上配上黑色背景，能使它的颜色更加明亮跟饱满。相反的，本来以为白色能够有强烈的反差，可是颜色却看起来没那么锐利(sharp)的。

干净的桌面是不变的规则

使用白色或黑色都好，可是很重要的一点是桌面绝对不能脏乱或有污渍！只留下对构图有帮助的物品，例如餐具、花瓶、书等，而不是揉成一团的卫生纸或是残留在桌上的水渍。拍摄前可以实验不同的背景 (eg. 大理石、木质)，看看哪些颜色和纹理最适合展示你的料理。

潮人都这样拍―手持食物拍摄。最后一种方式是最适合外出旅游时的时候用，也是近两年来很流行的一种摄影方式。那就是找个合适的背景，手持食物拍摄（在好拿的前提下），把食物用手拿着朝向天空，不同的背景，能创造出不同的气氛。很适合用来拍摄街边小吃或者是最近流行的亮色墙面都可以用来作为背景拍照。

角度

每种食物的形状都不一样，有长有短，层次也有高有低。所以不是靠同一个角度走天下，就想要拍摄出令人食指大动的美食照。拍摄的角度大多数取决于食物的摆盘方式，以下这几个是基本常用的角度：鸟瞰、水平、侧面，大家可以参考看看喽～

A. 鸟瞰角度

鸟瞰角度也就是我们近年来常看到的由上往下拍摄的方式。这样的摄影手法常用于拍摄整个餐桌的样貌，不只局限于食物本身，连周围的布置也一起入镜。满桌的美食，加上餐桌上的石器、摆设，甚至用餐人士的手都可以让画面加分、更有意境。

如果是单一道菜，鸟瞰角度适合用于平铺的摆盘方式，也就是说这道菜本身并没有高度，就好像上图。两张照片是同一道菜，可是因为厨师的摆盘方式是平面的，所以如果从侧面拍会有凌乱的感觉，没办法看出这道菜的重点。

B. 水平角度

水平角度非常适合用来拍摄多层次或是有高度的食物，例如千层蛋糕或是有夹心的美食。这种有高度/层次的食物如果用鸟瞰角度拍摄，多半都会太平，并且无法显现出可口的内馅。

就像上方的图片，如果单以鸟瞰角度拍摄，只能拍得到太阳蛋跟露出一点点的骨头。然而，从水平角度来看，竟然这么多层次！展现了这道菜的特色跟诱人。

C. 侧面角度

侧面角度就是俗称的45度角，也就是刚好我们坐在餐桌前看着食物的角度，所以利用这个角度拍摄很容易让人觉得食欲大增～这个角度也可以把食物拍的有立体感，因为食物的顶端跟侧面都可以呈现出来，算是初学者最安全的摄影角度。

透过练习和经验累积培养决定何种背景和角度摄影。背景的搭配可以透过trial and error（试验与失败）来找到适合自己的风格跟运用方式，而角度的选择就是透过不断的练习跟经验累积，你就可以在看到食物的时候果断的选择出该用什么样的角度来拍摄。

构图＆增加故事性

构图以白话来说，指食物的摆放，其中又包含了比例、近距离、裁切。

a. 比例 / 画面平衡

比例跟平衡有个密不可分的关系，因为比例正确、画面平衡，整体感觉会让人很舒服。画面的比例不单单指摆设或位置，画面装饰（食器、背景、道具等等）跟食物的比例也很重要。你应该不会希望配角比主角还要来得抢镜。一开始，可以从上次提到的，完全干净的背景开始（如图）。

再进阶到开始丰富背景的摆设。如果不知道要从何开始，可以将要拍摄的主角放置在画面的正中央，然后以它为正中心往画面的四周慢慢加入要摆设的道具。

除了主角跟摆设道具之间的平衡，食材之间的色彩搭配也要好。想象衣服穿搭概念，但食物的颜色搭配可以比衣服来的跳tone一点和鲜艳一点！

衣服除了圣诞节可以接受红配绿，可是套用在食物搭配上就非常吸睛。例如色拉摆盘，一定要颜色丰富，绿色的生菜配上红色的西红柿、黄色的玉米、紫色的高丽菜和白色的蛋白质（eg.鸡肉、鸡蛋）等才会让人有食欲（衣服千万别这样穿呀….），如果你喜欢大地色系的穿搭，千万止于衣服就好，在食材配色上可以大胆一点。

b. 近距离: 单一的食物拍出气势感 ＆ 也适合料理的过程照

在美食摄影界有句玩笑话说：如果你感觉照片不够美，表示你拍得不够近！

之前谈及整个餐桌或是整体的拍摄，可是有时候近距离拍摄食物的细节或局部特写是可以很诱人的。尤其是拍摄单一食材，或是搭配简单的食物，这样的拍摄主题时可以将画面塞得满满的，让观众联想自己手中捧着满满的食材的回忆。例如图片中的意大利面。

拍摄食物的局部还有个好处，因为只有看到部分画面，基本上没有摆盘考量，满适合拍摄料理的过程中(work in progress)，食物还没办法摆盘，或着是桌面太凌乱不适合入镜的时机点。

C. 裁切：去芜存菁！让主题更突出

一开始会觉得说，如果构图一次搞定，为什么还要裁切呢？其实有时候适当的去掉一些背景，或是多出的空间，可以让整张照片看起来更和谐。裁切可成为构图的助力。有时候构图本身不差，可是去除多余的部分可以让主题更突出、照片更完美。

裁切的时候也要注意切除点。不要太过于专注在中心点而忽略了周围，好比裁切后的餐盘在中心点，手却被切掉一半，让整个画面有点不对劲，或是拿着叉子的手被裁掉，像叉子浮在半空中一般。

故事性

如果觉得单纯拍摄食物太单调无聊或是整个画面没有活力，又想要在自然情境下生活化照片，最简单的方法是使用完全免费的道具――双手。当然，手在照片里面还是配角，它在画面里是要有意义的（拿着三明治、刀叉、酒杯、MENU等等），而不是随便加入来捣乱。

手摆放的位子也要注意，例如不能占整个画面的比例太大。如果整张照片里，手就占了一半，那到底谁是主角呢？可不能让手抢了食物的风头，而且手的比例太大也容易让看得分心。就好比图中，如果手不出现，就像刚刚在裁切提到的，手上的汤匙就变成漂浮在半空中的漂浮物体（红框内 ）。

如果拍摄的主体比较单一或体积比较小（如：水果、果干、坚果），可以采双手捧住或集中在碗里来拍摄。这样不仅可以帮忙看的人聚焦，也可以展现出食物的实际比例。而且也有人家把食物端在你面前邀请你试吃的氛围。

然而，不是每次拍摄的时候摆盘或是食物本身是在最好的状态。最后一种（也是我最近蛮爱拍的）的拍摄手法就是营造出「正在吃」或是「即将开动」的感觉，让看照片的人有种期待的气氛。例如汤匙已经挖了一口或是刀叉呈现正在切的情况。(例如图中手正要把食物包起来故意营造中一种“即将要发生”的实时感）

要注意的是，被享用过的食物要注意它的切面。大部份的情况都可以接受，除了不太好看的齿痕或是完全毁了食物的完整性。营造随便感之余，还是很多细节是要特别注意的。

在最后，替各位总结几个每次拍摄之前需要注意的四个大重点 (thumb of rules)：自然光、新鲜的食材、整洁的摆盘和干净的桌子！所谓的少即是多(less is more)，一切从简开始！
